This is a list of known changes in version 3.0.0 of Super Smash Bros. Ultimate.
Universal
The new update brings new features on the general gameplay side:
Perfect shields will no longer activate multiple times when the shield button is released once. This was creating more downtime than a single perfect shield.
Dodges are more punishable when staled.
Parrying against a projectile has less ending lag.
Mario
At the start of Mario Finale, nearby opponents will be slowed more, and for longer.
Fireball deals less shield damage.
Donkey Kong
Giant Punch has more range.
Link
Boomerang deals less shield damage.
Samus
Charge Shot deals less shield damage.
Dark Samus
Charge Shot deals less shield damage.
Yoshi
Egg Throw deals less shield damage.
Kirby
Up smash's clean hit has a longer duration, with the late hit having a shorter duration instead.
Neutral aerial has less ending (FAF 63 → 55) and auto-cancels earlier.
Down throw deals more damage. (10.2% → 12%)
Kirby will keep Copy Abilities received by Inhale longer.
Final Cutter can snap to the ledge earlier.
Pikachu
Thunder Jolt deals less shield damage.
Ness
PK Flash has a larger attack range
Ness's yo-yo smash attacks have less charging time and has a shorter duration, no longer capable of breaking opponent shields at the edge of the stage.
Jigglypuff
Puff Up is easier to push enemies with.
Peach
Vegetable has less shield damage.
Peach Blossom has a reduced sleep time period.
Toad no longer stalls continuously in the air after the first use.
Daisy
Vegetable knockback has been changed to match Peach.
Vegetable has less shield damage.
Daisy Blossom has a reduced sleep time period.
Toad no longer stalls continuously in the air after the first use.
Bowser
Grounded Whirling Fortress can no longer be teched while the attack is still going.
Ice Climbers
Iceberg via the FS Meter has higher knockback.
Sheik
The neutral infinite's finisher has less ending lag.
Down tilt's tipper hitbox is easier to land.
Forward aerial has more range.
Needle Storm can be charged faster.
Zelda
Phantom Slash deals less shield damage.
Dr. Mario
At the start of Doctor Finale, nearby opponents will be slowed more, and for longer.
Megavitamins deal less shield damage.
Pichu
Thunder Jolt deals less shield damage.
Pichu has altered animations during aerial hitstun and when landing, making it easier to be hit.
Marth
Dash grab's range was increased.
Lucina
Dash grab's range was increased.
Young Link
Fire Arrow deals less shield damage.
Boomerang deals less shield damage.
Ganondorf
Ganondorf has altered animations during aerial hitstun, making him easier to be hit.
Mewtwo
Mewtwo's weight has been increased.
Neutral attack 1 is faster.
Forward tilt deals 1% more damage, with knockback compensated.
Up tilt deals 1% more damage, with knockback compensated.
Up tilt's tip hitbox has an altered angle.
Forward smash has increased range.
Up aerial deals 1% more damage, with knockback compensated.
Edge roll grants more intangibility.
Edge attack has increased range.
Shadow Ball deals more knockback.
Shadow Ball deals less shield damage.
Roy
Dash grab's range was increased.
Chrom
Chrom's victory theme was corrected to Id - Purpose, matching Lucina and Robin's themes.

Octopus via FS Meter now traps enemies for longer.
Pit
Palutena Bow deals less shield damage.
Dark Pit
Silver Bow deals less shield damage.
Wario
Chomp can eat projectiles more easily.
Snake
Up smash has more ending lag, lowering the mortar fire rate.
Back aerial has more knockback growth.
Hand Grenade deals less shield damage.
Remote Missile lingers shorter.
Ivysaur
Razor Leaf deals less shield damage.
Charizard
Grounded Flare Blitz can more easily hit enemies below it.
Diddy Kong
Forward tilt has longer duration.
Dash attack has decreased start-up (frame 9 → 8).
Down smash deals more knockback.
Neutral aerial has more range.
Up aerial deals more damage (6% → 7%), with its knockback compensated.
Sonic
Super Sonic has more range.
Super Sonic via the FS meter has more range and has higher knockback.
Spin Charge no longer loses his double jump when performed on platforms.
King Dedede
Gordo Throw deals less shield damage.
Olimar
Olimar's smash attacks now properly have their damage scale when charged.
Forward smash deals less shield damage.
Pikmin Throw deals less shield damage.
Lucario
Aura Sphere deals less shield damage.

Leaf Shield has more startup and ending lag, and Mega Man can no longer throw items during it.

Neutral attack's finisher has more bury range.
Sun Salutation deals less shield damage.
Header deals less shield damage.
Grounded Header's soccer ball spawns from a different spot.
Rosalina & Luma
At the start of Grand Star, nearby opponents will be slowed more, and for longer.
If Luma is close, Luma will move in front of Rosalina when using a reversed down tilt or forward tilt.
Luma Shot deals less shield damage.
Star Bits deal less shield damage.
Greninja
Water Shuriken deals less shield damage.
Mii Swordfighter
Edge attack has more range.
