What do you mean by a Coins and Counters attack? I'm not sure which of G&W's attacks your talking about. But I think I've filled in three of the special moveset slots. I'm planning to give Birdo the ability to shoot fireballs, eggs, and swallow people. I still need one more, and this Coins and Counters thing might fit it, if you could clarify what it is.
